Rice and potato curry

Curry
Ingredients
- 3 Potato
- 3 tomatoes
- 2 tablespoons of tomato paste
- 3 cups of water
- 1 Onion
- 1 tablespoon of Oil
- 1 teaspoon of Curry
- 1/2 teaspoon of pepper
- 2 teaspoons of Salt
- Chicken (optional)
Process
- Cut the potato into cubes.
- Chop the onion into small pieces.
- Cook onion and vegetables, stirring occasionally, for 5 minutes or until soft.
- Add chicken (if using) and cook it till it is semi-cooked.
- Add potato and cook until it is tender and breaks easily.
- Chop the tomatoes, add to the pot, and then add the tomato paste and water.
- Add the curry, pepper and salt.
- Cook for 30min, on low heat.
Rice
Ingredients
- 2 teaspoon salt
- 3 cups of uncooked rice
- 800ml of water
Process
- Wash rice till the water is semi-clear, and leave it in water for 15 minutes.
- Add water to a pot and heat until it boils.
- Once it starts boiling, add rice and cook until soft. This can take about 15-17 minutes.
- Wait till the water is drained and the rice is ready.
Tips
- The curry can be frozen for later days.
- Chopping the vegetables really small and adding them into the dish is a great way to have a balanced meal with the family. It can use any vegetables available at home.
- You can add any meat.
