Rice and potato curry

Curry

Ingredients

  • 3 Potato  
  • 3 tomatoes  
  • 2 tablespoons of tomato paste 
  • 3 cups of water  
  • 1 Onion  
  • 1 tablespoon of Oil  
  • 1 teaspoon of Curry  
  • 1/2 teaspoon of pepper  
  • 2 teaspoons of Salt  
  • Chicken (optional) 

Process

  1. Cut the potato into cubes.  
  2. Chop the onion into small pieces.  
  3. Cook onion and vegetables, stirring occasionally, for 5 minutes or until soft. 
  4. Add chicken (if using) and cook it till it is semi-cooked. 
  5. Add potato and cook until it is tender and breaks easily.  
  6. Chop the tomatoes, add to the pot, and then add the tomato paste and water.  
  7. Add the curry, pepper and salt. 
  8. Cook for 30min, on low heat. 

 

Rice

Ingredients

  • 2 teaspoon salt  
  • 3 cups of uncooked rice  
  • 800ml of water  

Process

  1. Wash rice till the water is semi-clear, and leave it in water for 15 minutes. 
  2. Add water to a pot and heat until it boils.  
  3. Once it starts boiling, add rice and cook until soft. This can take about 15-17 minutes. 
  4. Wait till the water is drained and the rice is ready.  

Tips

  • The curry can be frozen for later days.  
  • Chopping the vegetables really small and adding them into the dish is a great way to have a balanced meal with the family. It can use any vegetables available at home. 
  • You can add any meat. 
  • You can add any vegetables.
