Lentil soup

Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 carrot, peeled, finely chopped (can add other vegetables)
- 2 x 400g cans brown lentils, rinsed, drained (can add meat if wanted)
- If lentils are dried, wash till the water is mostly clear, and leave in water for 15 minutes before cooking.
- 1 tbsp curry
- ½ tbsp pepper
- 2 tbsp salt
Process
- Heat the oil in a large saucepan over medium heat.
- Cook onion and vegetables, stirring occasionally, for 5 minutes or until soft. If using some meat then cook well with vegetables.
- Add lentils with water.
- Reduce heat to low.
- Simmer for 10 minutes or until mixture reduces slightly.
- Optional: Process half the soup in a food processor until smooth. Return to the pan. Cook, stirring, over medium heat until heated through.
Tips
- You can freeze the lentil soup for later use.
- Chopping the vegetables really small and adding them into the dish is a great way to have a balanced meal with the family. It can use any vegetables available at home.
