Lentil soup

Ingredients  

  • 1 tbsp olive oil 
  • 1 onion, finely chopped 
  • 1 carrot, peeled, finely chopped (can add other vegetables) 
  • 2 x 400g cans brown lentils, rinsed, drained (can add meat if wanted) 
  • If lentils are dried, wash till the water is mostly clear, and leave in water for 15 minutes before cooking.  
  • 1 tbsp curry  
  • ½ tbsp pepper  
  • 2 tbsp salt  

Process  

  1. Heat the oil in a large saucepan over medium heat. 
  2. Cook onion and vegetables, stirring occasionally, for 5 minutes or until soft. If using some meat then cook well with vegetables.
  3. Add lentils with water.  
  4. Reduce heat to low.
  5. Simmer for 10 minutes or until mixture reduces slightly. 
  6. Optional: Process half the soup in a food processor until smooth. Return to the pan. Cook, stirring, over medium heat until heated through. 

Tips

  • You can freeze the lentil soup for later use.  
  • Chopping the vegetables really small and adding them into the dish is a great way to have a balanced meal with the family. It can use any vegetables available at home.
