  • 1 cucumber
  • ½ lettuce or cabbage
  • 1 lemon
  • 1 tablespoon vinegar
  • 1 ½ teaspoon salt
  • 1 tablespoon Olive oil

Process

  1. Cut the salad ingredients into any shape you like and mix them together.

Tips

  • You can add any vegetables that are roasted, steamed, or raw, depending on what is available at home and your appetite.
  • You can also add:
    • Beans
    • Boiled Pasta
    • Pomegranate
    • Hard Cheese
If kids are having trouble eating their vegetables or you think they might need more, zucchini, mushrooms, carrots, capsicum can be chopped small and added to dishes like bolognese. You can use any veggies you have at home and its good for the whole family.
You can swap out different meats or proteins. Cans of lentils and beans can help bulk up a meal and don't cost as much as meat.
It’s good to learn from those around you. Talk to family and friends, find out what they love to cook and get them to teach you. And then teach your kids and get them involved in the kitchen.
